You expect a company that has been developing knives since 1731 to know a
little something about knives. And you would be right.
Zwilling J. A. Henckels represents the best in German steel and knife design – and everything is guaranteed against defects in material and craftsmanship. Henckels guide to buying knives
1. Crafted steel The key to a knife is its heart of steel – and steel blends are a closely guarded secret. Forging is the process that optimizes heat and pressure to mould the ideal knife shapes into strong, yet fl exible, cutting tools.
2. Precision workmanship The parts of the knife should be jointlessly assembled. There should be no seam between the bolster and handle. This is important for hygienic reasons – to avoid irregularities where bacteria can settle.
3. Surface finish and corrosion resistance The blade should have a finely
ground complexion. The more fi nely the surface of the blade is polished, the more resistant to rust it will be.
4. Safety An ergonomically designed handle should include a full tang, balanced weight, secure grip and a comfortable feel to permit safe, tireless use.
5. Cutting edge retension This is something you can’t see, so always rely on a brand with a history. Reputations are won and lost on knives’ ability to cut.
