4 cornish hens

to taste salt and pepper
to taste
     
1/2 cup butter
125 ml
     
12 to 16 oz pineapple slices (1 can)
about 400 g
     
1 cup chicken broth
250 ml
     
1/4 cup sugar
60 ml
     
1/2 tsp ground ginger
3 ml
     
2 tsp cornstarch
10 ml

Season cavity of hens with salt and pepper.
Place in a large roasting pan, breast side up.
Brush with half the melted butter.
Drain pineapple, reserve juice.
Add water to make 1 cup of liquid.
Combine 1/2 cup of juice liquid with chicken broth.
Pour over hens.
Bake 350º for 50 to 60 minutes.
Baste with remaining butter and pan drippings.

Place 2 pineapple slices on top of each hen.
Combine sugar, ginger, cornstarch and remaining
pineapple liquid.
Spoon sauce over Cornish hens.
Bake at 400º for another 15 minutes.
