Finely shredded lemon peel (optional)
• For crust: in your Cuisinart stand mixer or food
processor, mix together flour, powd-ered sugar, pecans
and 1/4 cup of the coconut. Then add butter.
• Press mixture into a greased 8 x 8 x 2-inch baking pan.
• Bake in a 350º F (180ºC) oven for 20 minutes.
• Beat eggs slightly. Feed in granulated

sugar, lemon peel, lemon juice and baking powder. Then add remaining coconut. Mix until combined.
• Pour over crust.
• Bake in the 350º F (180º C) oven for about 20 minutes or until edges are lightly browned and centre is set.
• Cool in pan on a wire rack. Cut into triangles. Top with lemon peel, if desired.
