2 cups all-purpose flower

1/3 cup sifted powdered sugar
75 ml
     
1/4 cup chopped pecans
60 ml
     
3/4 cup coconut
180 ml
     
1/3 cup butter, melted
75 ml
     
1 cup granulated sugar
250 ml
     
2 tsp shredded lemon peel
10 ml
     
1/4 cup lemon juice
10 ml
     
1/4 tsp baking powder
2 ml

Finely shredded lemon peel (optional)
For crust: in your Cuisinart stand mixer or food processor, mix together flour, powd-ered sugar, pecans and 1/4 cup of the coconut. Then add butter.
Press mixture into a greased 8 x 8 x 2-inch baking pan.
Bake in a 350º F (180ºC) oven for 20 minutes.
Beat eggs slightly. Feed in granulated


sugar, lemon peel, lemon juice and baking powder. Then add remaining coconut. Mix until combined.
Pour over crust.
Bake in the 350º F (180º C) oven for about 20 minutes or until edges are lightly browned and centre is set.
Cool in pan on a wire rack. Cut into triangles. Top with lemon peel, if desired.
